Most mustard oils available in the market are made from yellow mustard seeds milder, less pungent, and far more common. Our Aava Nune is made exclusively from black mustard seeds the traditional variety used in Andhra cooking for centuries.
Black mustard seeds contain a significantly higher concentration of natural volatile compoundsΒ the source of that sharp, nose-clearing pungency that Andhra pickles are famous for. This pungency is not just flavour it is also what gives the oil its natural preserving power, keeping pickles fresh and shelf-stable for months without any added chemicals.
π HOW WE EXTRACT OUR OIL
Raw black mustard seeds are loaded into our traditional wooden ganuga. A bull walks in slow, steady circles, turning the wooden pestle that crushes the seeds gently at room temperature. The sharp, pungent oil flows out naturally, is filtered, and bottled that is all.
